Sweet Potato Pancakes

A nice little breakfast recipe that gives you a pancake alternative with a high protein content. Why not add some wilted spinach or asparagus to make a nicely balanced meal. 

Ingredients (2 servings = 12  pancakes)

  • 300g sweet potato (cooked and mashed)
  • 2 eggs (beaten)
  • 4 egg whites (beaten)
  • 1-2 teaspoons cinnamon

How to cook:

  1. Mix all ingredients thoroughly together
  2. Heat up a pan over medium heat
  3. Make 12 little pancakes
  4. Cook in a pan for approximately 2-3 minutes each side or until pancakes are an even golden colour
